Mashed Cauliflower

Mashed cauliflower is a delicious alternative to mashed potatoes and it freezes well.

Serves 4

1 head cauliflower, cut into small florets
1 tbsp cream cheese
1/4 cup shredded parmesan
1/2 clove garlic, minced
1/5 tsp salt
pinch of pepper
5 tbsp butter


  1. Steam or boil the cauliflower until very tender.  If you boil the cauliflower, drain it very well.
  2. Puree the cauliflower and the other ingredients together with a food processor, blender or immersion blender.  Season to taste with salt and pepper.
To freeze:
Divide into containers or bags and freeze.

To serve:
Thaw in the refrigerator overnight.  Reheat in the microwave, taking breaks to stir regularly until the internal temperature reaches 140 degrees.
