Egg Puffs

These make a delicious, filling and convenient breakfast.  Plus it's easy to make a lot of them, so if you need a lot breakfasts, this is for you.  A double batch makes a ton of these.

I dice up a couple bell peppers and add them to the batter.

To freeze: 
Freeze these in a single layer on a sheet pan lined with parchment paper.  Once they're frozen solid, move them to a container or bag.

To serve:
Thaw the puffs overnight in the refrigerator.  Microwave for 1 to 2 minutes or until heated through.  These could probably be defrosted by microwaving for a few minutes at low power (like 30 or 40%) and then microwave on high for a minute or so to heat, but I haven't have it tried it yet.
